Born in Kyoto. She is the representative of “Hakkoshokudo Kamoshika” and runs a fermentation diner, a fermentation marché, and a fermentation laboratory in Arashiyama.
With the concept of “bringing fermented foods back to the kitchen,” she promotes the culture of handmade fermented foods, especially miso, nukadoko, rice malt, and natto, as well as the health of the intestinal environment.
